Apple Streussel Pie del Nego



Pastry

2 1/4 cups unbleached all-purpose flour
1/2 tsp salt
3/4 cup cold unsalted butter cut into pieces
1/2 cup sour cream

place flour, salt and butter in the mixer bowl. beat until mixture resembles coarse meal, stop mixer and add sour cream. set to speed 2 and beat until dough begins to come together. Add 1 tbsp water if dough looks shaggy and dry. cut dough in half and form each half into a disk. wrap in plastic wrap and refrigerate for at least 1 hour until firm, or for up to 24 hours.

For the Streussel Topping

1 cup unbleached all-purpose flour
1/3 cup light brown sugar
1/3 cup granulated sugar
1/4 tsp salt
1/2 cup unsalted butter
3/4 cup walnut halves, coarsely chopped

place flour, brown sugar, granulated sugar, salt and butter in mixer bowl. set to speed 2 and mix until coarse crumbs form. mix in walnuts until evenly incorporated. remove the mixer bowl and set aside.



Filling

3 lbs apples, peeled and quartered
3/4 cup granulated sugar
3 tbsp unbleached all-purpose flour
1/2 tsp ground cinnamon
1/4 salt
1 tbsp freshly squeezed lemon juice

slice the apples, sprinkle with sugar, flour, cinnamon, salt and lemon juice and toss to coat.




Roll out pastry and fit into pie plate. trim and flute or crimp edge. pour apples into pie shell.



1 egg
1 cup whipping crean
Vanilla ice cream!!!!!!

in a small bowl, using a fork, mix together egg and whipping cream. pour over apples.




bake in lower third of preheated oven for 40 minutes. remove from oven and sprinkle with streussel topping . bake until top is golden brown and apples are tender, about 20 minutes. remove and let cool on rack.



serve warm or at room temperature with ice cream or whipped cream.
