Apple Cake


Cake ingredients

2 beaten eggs
3 cups flour
2 teaspoon finely shredder lemon peel
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon salt
1 cup granulated sugar
1 cup packed brown sugar
1 cup cooking oil
1 tablespoon vanilla
3 cups chopped, peeled apples
1 cup chopped pecans, toasted


Crumble ingredients

6 tablespoons flour
6 tablespoons brown sugar
2 teaspoons cinnamon
4 tablespoons butter
1 cup toasted pecans

Prepare the crumble.  Combine the first three ingredients together and add the butter in chunks to the mixture.  Once you get coarse crumbs, add the pecans and set aside.

Allow eggs to stand at room temperature for 30 minutes.  meanwhile, grease and lightly flour a tube pan; set it aside.  In a medium bowl stir toghether flour, lemon peel, baking powder, baking soda, cinnamon, allspice, and salt; set aside.

In a mixing bowl combine granulated sugar, brown sugar, oil, eggs, and vanilla.  beat with an electric on medium speed for 2 minutes. Add flour mixture and beat on low speed just until combined.  Spoon batter into prepared pan, putting first one layer of batter then half of the apples, another layer of batter, the rest of the apples and finally the crumble.

Bake in a 350 oven about 50 minutes or until a wooden toothpick inserted near the enter comes out clean.  cool  cake on rack for 10 minutes, remove from pan, and cool thoroughly.
