For these super fluffy cookies you will need:
3 egg whites
a pinch of salt
1 tbsp granulated sugar
3 egg yolks
1/2 cup granulated sugar
1 tsp vanilla
1/2 cup unbleached all purpose flour, sifted
confectioner's sugar, sifted
Place egg whites and salt in the mixer bowl and beat until foamy. increase speed and beat until soft peaks form. Beat in the one tablespoon sugar until stiff, glossy peaks form. set aside.Place yolks in the mixer bowl and beat until thick and lemon-colored. Beat in sugar in a steady stream; beat in vanilla and continue beating at least for 4 min. or until mixture is thick and pale.Using a large rubber spatula, gently fold whites and flour into the yolk mixture, making four additions of each, until batter is light and fluffy. Be careful not to overmix the batter.
Spoon into pastry bag and pipe fingers onto prepared baking sheets. sprinkle with confectioner's sugar. Bake in middle of preheated oven (150°c) for 10 - 15 min. Let cool
...and, I just couldnt help not dipping the cookies in dark chocolate, for this you just have to melt the chocolate on a double boiler and add a tsp or tbsp of oil to it, dip in the cookies and let cool on a wire rack.
I prepared these as a topping for an ice cream a fruit salad dessert for mother's day...delicious...or may I say... sugar rush as somebody says!
