Apple Streusel Coffee Cake
This is a perfect cake to prepare for a rainy saturday coffee time.
To prepare this cake you will need:
2 cups unbleached all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 eggs
1 cup sour cream
2 tsp vanilla
1 cup pecan halves chopped ** (I substituted these for figs)
3/4 cup firmly packed light brown sugar
2 tsp ground cinnamon2 apples peeled and sliced into 12 slices each
In a medium bowl, whisk together flour, baking powder, baking soda and salt.
In another bowl, combine figs, brown sugar, and cinnamon.
Place granulated sugar and butter in the mixer bowl and beat until light and fluffy, about 4-5 min. decrease speed to stir and add eggs, sour cream and vanilla; mix until combined. add flour mixture and mix until smooth.Sprinkle one-third of the pecan mixture into the bottom of prepared pan. Top with half of the batter, half of the apples and another third of the pecan mixture. repeat layers once more.Bake in middle of preheated oven (180°C) for 45 - 50 min, or until tester inserted comes out clean. Let cool in wire rack for about 30 min. Serve warm or room temperature.
